WHITE WINES

Black Swan Classic White 2010 - $8/$28
A blend of old vine Chenin & Chardonnay, producing an easy drinking wine with a nose of passion fruit, paw paw & tropical fruits, contrasted to the back palate leaving a zesty lemon and a crisp fresh finish   

 
Black Swan Chardonnay 2011 $8/$28
A dry, light unwooded Chardonnay, with a nose of lemon & limes. A zingy lifted palate’ of melons & stone fruit with a crisp flinty acid finish


Black Swan Wooded Chardonnay 2012 $9/$38
On French oak for 6 months, this Chardonnay possesses  a mouth filling combination of stone fruit and marmalade flavours with a soft toasty finish.

 
Black Swan Chenin 2012 $7.50/$25
A semi dry wine with a nose of pineapple, lime & guava, with a mid-palate of stone fruit and a soft refreshing finish.

 
Black Swan Sauvignon Blanc 2012 $12/$45
Made with fruit from Dardanup, there is nose dominance of of green apples and passionfruit, followed by  a mouth fill of voracious citrus and a balanced acid finish


Azure Sauvignon Blanc 2011 (Marlborough) $35
A refreshing and zesty wine with a combination of passionfruit, lime and kiwi fruit, with undertones of freshly cut grass leading into a tight finish.


Dyed In The Wool Sauvignon Blanc Semillon 2011 (Margaret River WA) $35
Intense passionfruit, gooseberries and citrus intermingle with a hint of pineapple. Crisp and clean with a zesty finish


Sarantos Pinot Gris 2010 (SA) $7/$31
Soft-pressed to maximise pure colour, delivering flavours of natural, subtle peach


Lethbridge Pinot Gris 2010 (Geelong, VIC) $49
A beautiful, exotic nose of fresh ginger, with hints of spice, white flowers & greengage fruit. A wine with a James Halliday rating of 92 points.


Ritual Viognier 2008 (Dwellingup WA) $28
Floral orange/apricot aromas are expressed & these notes continue on to the palate where they are heralded by stone fruits, grapefruits and lemon finishing with a woody backdrop with good length


Cottle Bay Moscato 2009 (NSW) $32
A deliciously refreshing ‘frizzante’ style wine with vibrant fruit flavours and liftedaromas of grapes, peaches & passionfruit.  

CHAMPAGNES & SPARKLING WINES

Black Swan Chenin “Methode’ Champenoise” – $9/$42   
Hand made to the true “Champagne” sparkling wine tradition.Using fruit harvested from 65 years old vines, we offer this magnificent,semi dry sparkling, full of typical fruit flavours  And characteristics derived from Swan Valley Chenin. Delicate beads tickle the nose, followed by the aroma of apples, a full mouth thru to the back palate of autumn fruits, ending with a clean crisp finish. One glass is just, simply, “not enough!”

 
Moet & Chandon Imperial Champagne – (France) - $110
A brut imperial full of generosity & delicacy with maturity & vibrancy.

Veuve Clicquot Ponsardin (France) – $140  
A fresh and flavoursome champagne, fruity notes with a subtle bite. Spoil yourself and enjoy as either an indulgent aperitif or with the main meal itself.\

Geisweiler Monopole Blanc de Blancs (France) –  $45
Pale gold with delicate bubbles, aromas of grapefruit and wild flowers, fresh and elegant taste

RED WINES

Black Swan Cabernet Franc 2006 - $10/$45
We proudly present our Cabernet Franc, a scarcity for the region, produced from 65 year old vines with nose characteristics consisting of raspberry, mocha, cinnamon and dried fruits. The wine is full bodied with a palate of black berry, plums, chocolate & vanilla beans. The afterwards is firm structured tannins with a long length finish

Black Swan Cabernet Sauvignon 2005 - $10/$45   
Ideal weather conditions for the 2005 vintage resulted in anoutstanding crop, delivering a deep purple & bold Cabernet Sauvignon with a nose of blackberries, cigar and chocolate. Maturity has brought on a full palate of upfront black berry fruit with tight structured tannins producing  a full body and lengthy finish.  
 
Black Swan Cabernet Sauvignon 2006 – $8/$26
From the “pensioner” vines, delivering an inky, deep purple & bold Cabernet Sauvignon, with a nose of “fruits of the forest”. Maturity has brought on a full palate of upfront black berry fruit, eucalyptus and mocha with tight structured tannins.
    
Black Swan Cabernet Merlot 2007 – $8/$28
A blend of Cabernet Sauvignon and Merlot, resulting in a wine of dark plum colour and a delicious nose of plum, black berries,mocha, allspice, cloves and cinnamon. A full bodied, broad palate of vanilla bean, chocolate and black berries with an extra-long finish.

Black Swan Shiraz 2010 - $8/$26
A softer Swan Valley Shiraz with a nose of plums, ground pepper and allspice. Soft tannins deliver a mid-length finish  

Black Swan Rosé 2010 - $7/$24
Using Cabernet Sauvignon fruit with skin contact for 24 hours resulting in a strawberry coloured wine with light, fresh and crisp upfront beginnings. This follows with a delicate sweet red berry palate with a hint of confectionary and fruity after tones .

Henschke Henry’s Seven 2009 Barossa (SA) - $72
A blend of Shiraz, Grenache, Mourvedre and Viognier. This is one of Australia’s finest, full bodied and character driven blends with intensifying berry flavours.
  
Alkoomi Blackbutt 2007 Icon Range (WA) – $87
One of the state’s best blends. The wine is made from Cabernet Sauvignon, Malbec and Cabernet Franc. Matured in French oak, the wine has rich intense flavours of berries, cedar & spice delivering a full palate of richness. Soft tannins ensure a lengthy, lingering finish.
 
Talijancich Graciano 2009 (Swan Valley) - $49
Matured in new French oak, this full bodied dry red displays characteristics of blackcurrant and liquorice. On the palate there is a short length, with a lingering finish.

Faber Vineyards Dwellingup Malbec 2008 (WA) – $58
Hand crafted grapes from Orondo Farm, WA, the wine exhibits intense white pepper, spice and cedar characteristics. Mid to back palate continue to enjoy the rich flavours.

Faber Vineyards Riche Shiraz 2008 (WA)  - $60
Techniques were used to concentrate flavours and tannins, producing an intensely flavoured Swan Valley Shiraz 
 
Map Maker Pinot Noir 2009 (New Zealand) – $45
This wine has a lovely aroma of ripe cherries and a palate of soft, juicy red fruits, dried herbs and a lively lingering finish with soft, velvety tannins.
 
Hugh Hamilton ‘The Mongrel’ Sangiovese Blend 2010 (SA) – $35
A wine featuring a vibrant red colour with a “fruit of the forest” nose giving way to earthy flavours of raspberries, cherries and liquorice.
